This is a menu from the Cathay restaurant located on the second floor of the Cathay building on Handy Road. The menu shows that it was produced on the occassion of a Chinese dinner to honor the Prime Minister and his guests. The hosts were members of the Chambers of Commerce of Singapore and the Singapore Manufactures Association.This restaurant opened in 1940 served European food. In 1951, it was renovated and reopened as a Chinese Restaurant. Considered asa fine dining place, there was a bar, a dance floor and chefs who made Cantonese and Shanghainese dishes. The restaurant closed down in 1964. The owner Cathay Organziation revived the place and reopened the restaraunt in 2007
